Chicken Breast in Tomato Sauce

Hello Everyone!

Been a busy week so this update is another quick one. I was looking for something that I could easily throw together and put in the oven while I was doing my chores- this turned out excellent and took me minutes to prepare.

Chicken Breasts in Tomato Sauce


I started off by picking one of my large roasting dishes, and pouring in a large can of chopped tomatoes. Then I mixed in some basil, oregano, chilli pepper, salt, pepper, and pressed garlic.


To this I added chopped onion, tellow pepper, and carrot. I mixed it thoroughly, and then added in two chicken breasts.

The chicken breasts are left whole, put in the centre of the tomato and vegetable mixture. It’s easier to put the breasts in the pan and pour the tomato mix on top of them (stirred in another container), but I was working fast instead of smart.


This was put in the oven on bake at 400f for about 45-50 minutes. The cooking time will vary, I was using a convection oven so it could be a bit faster than it would in other ovens. The length of time is NOT the important part – the temperature of the meat is. Always cook poultry to an internal temperature of 180f, as measured in the thickest part of the meat.


The chicken turned out moist and delicious – it was served with rice and steamed vegetables as part of our meal.

Hopefully this is another fast gluten free recipe that you can add to your repertoire. The spice mixture can be changed very easily to give you flavours from all around the world- this is just what I had on hand for a quick and easy meal.
